Hearty Country Style Breakfast Burritos

Hearty Country Style Breakfast Burritos - This Country Home

They say breakfast is the most important meal of the day right? Which is great, because it’s also my family’s favorite meal of the day. In fact, we love it so much that we usually have breakfast for dinner at least one meal a week. This week our breakfast dinner was breakfast burritos. Burritos of any kind are really great, but I think breakfast burritos are my favorite. It really helps that they’re frugal and easy to make too! When we have time, I love homemade potatoes with them, but for simplicity’s sake this week I made them without.

You’ll notice that I used a cast iron to make this meal. If you’re new to country cooking and don’t yet have a cast iron – get yourself one (or twenty)! Cast irons are invaluable and can replace much of the cookware that you have. Not to mention, if cared for properly, they’ll provide you with YEARS of wonderful meals. I have an older Lodge cast iron and while couldn’t find my exact pans here is a 3-pack set of Lodge skillets that will get you totally hooked on cast iron and if you need a great cast iron cookbook, Lodge makes an awesome cookbook to get you comfortable with your new skillets (I LOVE my copy!)! • 12 flour tortillas
  • 18 eggs
  • 1 pound breakfast sausage substitute bacon, ham, etc
  • 1/2 cup milk
  • 6 chopped mushrooms my favorite are criminis
  • 1 chopped bell pepper
  • 1 bunch chopped green onions you can also use a medium onion

  • pepper to taste
  • 1/2 cup cheese
  • 12 chopped green chilies optional - I leave these on the side

  1. Brown sausage in a cast iron pan. While sausage is cooking, chop veggies.

  2. Once the sausage is done, you can either leave it in the pan while you cook the veggies or you can remove it and let it drain while you cook your veggies.
  3. Sauté the veggies until almost done.

  4. While they are cooking mix up the eggs in a bowl. Add the milk, salt and pepper.

  5. At this point you have two options. Some people recommend you remove the meat and veggies from the pan while you cook your eggs then add them back in later. Or you can do what I did and cook the whole mess together.

  6. Cook the eggs until they're done. Add the chilies now if you'd like them mixed in with everything.  Otherwise you can add them to each burrito.  Sprinkle the cheese on top, turn off the heat and let the cheese melt.
