Hearty Country Style Breakfast Burritos

These simple and easy to prepare breakfast burritos are sure to please a crowd. With such a large recipe, you can easily make extras and toss them in the freezer for a filling busy morning meal!

  • 12 flour tortillas
  • 18 eggs
  • 1 pound breakfast sausage substitute bacon, ham, etc
  • 1/2 cup milk
  • 6 chopped mushrooms my favorite are criminis
  • 1 chopped bell pepper
  • 1 bunch chopped green onions you can also use a medium onion
  • salt to taste
  • pepper to taste
  • 1/2 cup cheese
  • 12 chopped green chilies optional - I leave these on the side


  1. Brown sausage in a cast iron pan. While sausage is cooking, chop veggies.

  2. Once the sausage is done, you can either leave it in the pan while you cook the veggies or you can remove it and let it drain while you cook your veggies.
  3. Sauté the veggies until almost done.

  4. While they are cooking mix up the eggs in a bowl. Add the milk, salt and pepper.

  5. At this point you have two options. Some people recommend you remove the meat and veggies from the pan while you cook your eggs then add them back in later. Or you can do what I did and cook the whole mess together.

  6. Cook the eggs until they're done. Add the chilies now if you'd like them mixed in with everything.  Otherwise you can add them to each burrito.  Sprinkle the cheese on top, turn off the heat and let the cheese melt.

  7. Add the egg mixture to the tortillas and enjoy!
